Roast Turkey with Cranberry-Sausage Stuffing
Ingredients:
1-1/4 lbs. frozen broccoli spears, thawed and drained
1/4 C. grated Parmesan cheese
6 slices cooked turkey, 2 oz. each
1/4 C. milk
1/4 t. ground nutmeg
11 oz. cream of chicken soup
1/4 C. margarine
1 C. buttermilk baking mix
Preparation:
Preheat oven to 400. Arrange broccoli in a greased 11x17 dish. Sprinkle with half the Parmesan cheese. Layer turkey on cheese Combine milk, nutmeg, and soup in a bowl. Spoon over turkey. Cut butter into baking mix and remaining Parmesan cheese until crumbly. Sprinkle over soup mixture. Bake uncovered for 25 minutes until golden brown. Serves 6.

3/4 lb. pork sausage
1/4 C. butter
1 1/2 C. onion-chopped
1 1/2 C. celery 1 t. poultry seasoning
1 t. sage, rubbed
1 C. fresh cranberries, cut in half
8 C. dry bread crumbs
1/2 C. chicken stock or water
1/4 lb. turkey 1/4 C. butter, melted
1 1/3 C. chicken stock
Preparation:
Cook sausage thoroughly, transfer to large bowl. Melt butter in skillet with grease. Add onion and celery, cook until tender. Stir in next 5 ingredients. Transfer to sausage bowl. Mix well. Add water if too dry. Season inside of turkey w/ salt and pepper. Fill neck and cavity with stuffing. Truss bird with string, brush with melted butter. Roast turkey on rack in roasting pan about 20 min./lb. at 325 degrees, basting with chicken stock and brushing with butter every 25 minutes. Thermometer should register 175 degrees in thickest part when done (or leg and thigh pull apart easily) Let stand for 20 min. before carving. Serves 12.
