Foiled Fish on the Grill

Firecracker Shrimp/Steak

Ingredients:
2 lb. medium shrimp (peeled)
1 stick butter
1/2 C. oil
2 lemons
6 cloves garlic, pressed
3 T Worcestershire
1 t. cayenne pepper
1/2 t. salt
1/2 t. pepper
1 t. chili pepper

Preparation:
Melt butter. Juice lemons and add to melted butter. Pour over shrimp. Combine rest of ingredients and toss over shrimp. Stir well to coat shrimp. Allow to marinate for 1 hr. Thread shrimp on wood skewers that have been soaked to prevent burning. Grill.

Option: Alternate shrimp on skewers with mushrooms, slices of green pepper or wedges of onion or tomatoes. Serves 4-8.

Steak Option: Cut sirloin or round steak in 3/4 cubes and marinate in same mixture for 6-8 hrs. Note- Put shrimp and steak on separate skewers. The steak takes much longer to cook.

Foiled Fish on the Grill

Ingredients:
1 lb. fish fillets
1/4 C. lemon juice
1 T dill weed
1/4 t. pepper
1 onion-thinly sliced
2 T margarine (not diet)
1 t. parsley
1 t. salt
1/4 paprika
1/4 t cayenne pepper (optional)

Preparation:
Use heavy aluminum foil cut into large squares. Place portions of the fish on each piece of foil. In a saucepan, melt margarine. Add lemon juice, pepper, and salt. Stir well. Pour this mixture over the fish. Sprinkle with paprika and dill. Top with onion which has been separated into rings. Fold and seal tightly. Allow room for the food to expand, and steam to form, while cooking. Place wrapped fish on hot grill and grill for 5-7 minutes per side. It should flake easily when done.
