Cranberry Rice
Ingredients:
2 C. water, divided
2 C. (1/2 lb.) fresh or frozen cranberries
1 1/3 C. minute rice
1/8 t. salt
1 1/3 C. sugar divided
¼ t. cinnamon
1 apple, peeled and cubed
Preparation:
In a saucepan, combine ½ C. water and 1 C. sugar; bring to a boil. Add the cranberries; return to boiling. Reduce heat; simmer for 10 minutes or until most of the berries pop, stirring occasionally. Add rice, cinnamon, salt and the remaining water and sugar. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Serve hot or as a cold salad. Refrigerate leftovers.
